Fairtrade Recipe

Sustainable snacks that are kind to the planet and to the soul and that bring a smile to your face.

Why not make them with actual Fairtrade products?
Fairtrade bananas are used and coffee grounds are also used as an ingredient after the coffee has been brewed! The aroma of the fragrant Fairtrade coffee and the sweetness of the rich bananas will fill your mouth! This is a recipe for an exquisite sweet treat you won't forget once you've tried it.

Banana Coffee Cake

A blissful harmony of rich coffee aroma and banana sweetness. How about a gluten-free banana coffee cake that you can enjoy guilt-free? Made with fair trade ingredients, it's a delight for the body and soul.

Ingredient

  • Pearl flour - 180 g
    Almond pudding - 60 g
    Toluene sugar - 90 g (other sugars can be used)
    Oil - 90 g (or other oil)
    Fairtrade bananas - 3 (mix 2 inside with the residence and place one on top)
    Eggs - 3
    Walnuts - about 60 g
    Fairtrade coffee grounds - 2 drip packs or 16g (pre-brewed weight)
    Baking powder - pinch
    Pinch of natural salt

Directions

  1. Remove 2 Fairtrade coffee drip packs from the bag with the grounds after extraction. (No need to dry them out)

  2. Break the walnuts into pieces by hand.

  3. Mash 2 Fairtrade bananas in a small bowl. (Preheat oven to 180°C.)

  4. In a separate bowl, mix the eggs with the sugar and the rice oil.

  5. Add the mashed bananas, flour and baking powder.

  6. Add the coffee grounds, walnuts and natural salt, mix and pour into a pound cake mould lined with a cookie sheet. Cut the remaining 1 banana in half lengthways and place on top.

  7. Bake in the oven at 180 °C for 35 minutes. The time will vary depending on the oven, so just check the colour and the centre of the cake to see if it is cooked through!

Coffee Pancake

The usual pancakes are transformed into an aromatic coffee-flavoured pancake! The rich aroma of fair trade coffee is a refreshing way to start the day. The fluffy batter and the bitterness of the coffee make these pancakes perfect for adults.

Ingredient

  • Pancake mix - 200 g

  • Milk - 150ml

  • Egg - 1 egg

  • Butter - 10g

  • Fairtrade coffee grounds - 2 drip packs or 16g (weight before extraction)

Directions

  1. Brew two Fairtrade coffee drip packs and take out the grounds (no drying required).

  2. Add the pancake mix, eggs, milk and coffee grounds to a bowl and mix well.

  3. Heat a frying pan, melt the butter and pour in the batter.

  4. Bake over low heat for 5 minutes, and when bubbles appear on the surface, flip it over and bake for another 5 minutes in the same way until it's done.

Sesame
Banana Coffee Cake

Sesame and banana coffee cake

Similar to Banana Coffee Cake, but this is a super easy recipe with simple ingredients and all you need is a food processor. It is gluten-free, but can also be made with flour or butter for a different flavour.

Ingredient

18 cm pound mould

  • Wheat flour - 150 g
    Sugar - 65 g (other sugars can be used)
    Oil - 60g (other oils, vegan butter or butter can also be used)
    Fairtrade bananas - 300 g (about 4 medium-sized bananas, 1 for garnish)
    Eggs - 2 eggs
    Fairtrade coffee grounds - 1~2 drip packs (as desired) or 8~16g (pre-brewed weight)
    Fairtrade sesame seeds - 10~15g (as desired)
    Baking powder - 7g
    Pinch of natural salt

Directions

  1. Remove 2 Fairtrade coffee drip packs from the bag with the grounds after extraction. (No need to dry them out).

  2. If the Fairtrade sesame seeds are roasted sesame seeds, scrub them.

  3. Put everything but the coffee grounds, sesame seeds and one banana into a food processor and blend to a paste. (Preheat oven to 180°C).

  4. Transfer to a bowl and stir in the coffee grounds and sesame seeds. Pour into a pound cake mould lined with a cookie sheet. Cut the remaining 1 banana in half lengthways and place on top.

  5. Bake in the oven at 180 °C for 35-40 minutes. The time varies from oven to oven, so keep an eye on it and check for browning and if the centre is cooked!
